You probably already know that the sweet potato is a classic southern food. You can find all sorts of southern food sweet potato recipes. Sweet potatoes are healthy, delicious, and versatile, so they can be used in many different sweet potato recipes and utilized in lots of ways.

One of the best ways to enjoy sweet potatoes is by simply baking them whole, in the skin. This can be done in the oven or in the microwave. To cook the tubers in the oven, place them on a cookie sheet or shallow baking pan and bake at 400 until the sweet potatoes are soft. Depending on the size of the sweet potatoes you’re cooking, this will take from 45 minutes to an hour. In the microwave, cook sweet potatoes just as you would white potatoes. When the potatoes are done, serve with melted butter, brown sugar, cinnamon, and salt.

Candied sweet potato recipes are very popular, too, especially at Christmas and Thanksgiving. These are often referred to as “candied yams.”

Most people also enjoy sweet potato soufflé, sweet potato casserole, and sweet potato pudding. These are similar dishes that contain mashed sweet potatoes, butter, eggs, cream, and/or spices. Some people add raisins, nuts, and/or pineapple. These concoctions are often topped with a crunchy nut coating or toasted marshmallows.

For a real treat and a healthier alternative to French fries and potato chips, try some fried sweet potatoes. To make crispy fried sweet potatoes, the tubers need to be sliced very thin. Fry just as you would French fries, home fries, or homemade potato chips. Drain on paper towels and sprinkle with your favorite spices, brown sugar, and/or salt.

In the South, one of our favorite ways to eat sweet potatoes is in sweet potato pies. A sweet potato pie is made much the same as a pumpkin pie, and they have a similar taste and texture. Sweet potato pies, however, are usually just a little sweeter than traditional pumpkin pie.

 Wait…we’re not quite done yet! Sweet potatoes can also be cooked on a grill. They first need to be peeled, then they can be sliced into planks, wedges, or circles. Brush the peeled, sliced tubers with olive oil before grilling, and make sure your grate is cleaned and oiled.

My song Mañana in song competition with Bob Geldof as a judge

My song Mañana has been entered in the current heat of a song contest organised by the YouBloom website and is currently in second place. Bob Geldof, of Boomtown Rats and the Band Aid charity single Do They Know It’s Christmas? fame, is leading the celebrity panel of judges and there is a big cash prize for the winner of the finals.
My song Harvest Home was in an earlier heat but despite a lot of people ‘Liking’ it it didn’t get enough votes to be in the top three which are classed as winners of a heat. This time I have done a lot better but whether I will be able to hold my position or better still make it to first place lies with the number of votes my song gets before the voting ends.
Mañana represents a new style of song for me and I am very optimistic about it doing well outside the YouBloom contest too. It is already confirmed to be released fronting an EP on DMMG Records in the near future, so its current success is great publicity for the actual release.

Eggplant and Tomato Casserole

Eggplant and tomatoes are both common in the South, so you’ll see them in many southern food recipes. Some people cook their eggplant with the peel on, but I always remove the peel before cooking. Also, eggplant can be bitter sometimes. To avoid this, I sprinkle the eggplant slices with a little salt and let them rest for a few minutes before cooking.

Eggplant and Tomato Casserole recipe

Ingredients you’ll need:

  • 2 eggplants, medium sized
  • Salt
  • Olive oil
  • 1 can diced tomatoes, with liquid
  • 3 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon minced garlic
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • Grated parmesan cheese
  • Grated mozzarella cheese
  • Italian bread crumbs
  • 1 tablespoon melted butter

Directions: Peel eggplant and slice ¼-inch thick. Sprinkle with salt and let rest for five minutes. Rinse off salt and pat dry.

Drizzle skillet with olive oil and heat over medium heat. Add eggplant slices and cook for one minute. Flip and cook other side for one minute. Remove from pan.

To the same skillet or pan, add diced tomatoes, tomato paste, basil, oregano, garlic, sugar, and salt. Bring to a full boil and immediately reduce heat to simmer. Simmer for five minutes.

Place half the cooked tomatoes in a buttered baking dish. Top with half the eggplant slices. Sprinkle with parmesan cheese and mozzarella cheese.

Add remaining tomatoes and remaining eggplant slices. Sprinkle top with bread crumbs, then with parmesan cheese. Drizzle with melted butter.

Bake casserole for about 30 minutes at 350 degrees, or until firm. Let stand for at least five minutes before serving.

Spicy Homemade Hamburgers

Who doesn’t enjoy sinking their teeth into juicy homemade hamburgers? With burgers you cook at home, the sky’s the limit when it comes to seasonings. We like all kinds of hamburgers, ranging from plain burgers with just salt and pepper, to more complicated hamburgers with layers of different flavors. This homemade hamburger recipe makes a hot, spicy burger, but the heat is cooled down by the cool dressing. For the jalapeno peppers, you can use fresh peppers or pickled jalapeno rings. I actually prefer the pickled jalapenos, but use whichever you like best or have on hand. Give it a try next time you fire up the grill!

Spicy Homemade Hamburgers recipe

Ingredients:

  • 1 pound lean ground beef
  • ½ pound hot ground sausage
  • 2 tablespoons minced jalapeno peppers
  • 2 tablespoons minced onion
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne
  • Hot sauce, to taste

Directions: Combine all ingredients and shape into six burger patties. Refrigerate hamburger patties for thirty minutes to an hour. Cook over medium coals until one side is brown. Flip burgers and grill other side until burgers are cooked completely.

Since you’re making six hamburgers, you’ll need six buns. You can use traditional burger buns, but I like to use toasted onion rolls. I split the onion rolls, spread both halves with mayonnaise, and broil until lightly toasted.

Now you need to make the sauce!

Cool Ranch Sauce recipe

Ingredients:

  • 1/3 cup bottled ranch dressing
  • 2 tablespoons sour cream
  • 2 tablespoon parmesan cheese
  • 1 teaspoon vinegar
  • 1 teaspoon sugar

Directions: Combine ingredients, making sure sugar has dissolved. Chill in the refrigerator until very cold. Sometimes I actually leave my sauce in the freezer for a few minutes. I love the contrast between the hot, spicy burger and the cold, creamy sauce.

Assemble your burger. Place a patty on each bun. Top burger with thinly sliced tomatoes, shredded lettuce, and ranch sauce.

American Recipes – Southern Fried Food

When Americans refer to southern food, they mean dishes and recipes traditional in the southern states of the U.S. In my opinion, these are among the very best American recipes. Why do I think this? Okay, I’ll admit I don’t look at southern food with an objective eye. I’m a southerner, from an old southern family. We have a strong heritage that’s rich in traditions and customs, like most southern families. We’re proud of our history and of our food, and we enjoy introducing others to these delicacies and sharing our bounty.

Some of the most popular southern foods are fried foods. We’ll fry almost anything. At the top of the list for favorites would have to be fried chicken. Not far behind fried chicken are other fried meats, including pork chops and beef cubed steak, also called “country fried steak.” How do southerners fry these meats? The meats are dredged in seasoned flour before frying. They might or might not be dipped in buttermilk, eggs, or whole milk first. The floured portions of poultry or meat can be fried in a skillet in a relatively small amount of oil, or they might be fried in deep oil. Southerners used to use lard for frying, but now many southern cooks are using peanut oil, corn oil, or canola oil, instead.

Another popular fried item in the South is fried vegetables. We commonly fry okra, green tomatoes, squash, eggplant, and zucchini. The vegetables are first washed and sliced, and sometimes they go through an egg wash before being rolled or shaken in a coating. The wash helps the coating stick better. The coating might be flour, cornmeal, cracker crumbs, or seasoned bread crumbs. sometimes grated parmesan cheese is added to the breading for extra flavor.

Fritters are another southern fried food favorite. A fritter is made by combining flour and/or cornmeal, eggs, milk or buttermilk, seasonings, and chopped or diced vegetables, corn, or fruit. The wet mixture is dropped by spoonfuls into hot oil or formed into “pancakes” and fried in a skillet. Some popular fritters include okra fritters, squash fritters, zucchini fritters, and apple fritters.

Oven Barbecued Ribs

If you enjoy BBQ cooking, but the weather won’t allow you to cook outdoors, you can always use your indoor oven. Spareribs, baby back ribs, country-style ribs, pork chops, and chicken are great when prepared with oven barbecue recipes. Since baby back ribs are among my all-time favorite dishes, I’ve cooked them in the oven from time to time. Although I much prefer grilled or smoked ribs, oven barbecued ribs will certainly do when you can’t use your grill or meat smoker.

The main flavor aspect most people like about grilling and smoking is the smoke itself. How do you get this indoors? You can get smoke flavoring with oven barbecued ribs by using a product called Liquid Smoke. If you’re not familiar with this ingredient, it’s a bottled liquid that looks much like soy sauce or Worcestershire sauce, and it literally tastes just like smoke. I’m not sure how they liquefy and capture smoke – I’m just glad someone thought of it and was able to figure out a way to do it!

For tender, flavorful oven-barbecued ribs, you’ll need to prepare the ribs properly first. Trim away any dangling bits of fat, and remove the tough skin from the back of the ribs. You can simply peel this covering off by starting at a corner with the point of a knife. Some stores and meat markets remove the skin before placing the ribs for sale, so you might not have to do the task yourself.

Next, rinse the baby back ribs or spareribs and blot them dry with paper towels. Rub the ribs with a light coat of olive oil and vinegar, along with sugar, brown sugar, black pepper, and/or salt, along with other dried herbs and spices.

Arrange the racks of ribs in a shallow baking pan and cover tightly with foil. Bake at 350 degrees for an hour.

Remove the pan from the oven, pour off any liquid, and baste the ribs with your favorite barbecue sauce. Return to the oven and bake uncovered for another 30 minutes, or until meat begins to pull away from the bone. When the ribs are done, I like to broil them for just a minute or two to slightly char the sauce.

Child Rearing – Difficult Child

I learned a lot about parenting tips through firsthand experience rearing three daughters. I probably learned the most with my difficult child, Shannon. I’ve written stories about my oldest and youngest daughters, so I decided it was time for me to introduce you to my middle daughter. I always referred to her as my “wild child.” Shannon marches to the beat of a different drummer. If you look up “free spirit” in the dictionary, you’ll find Shannon’s photo and biography beside the lexicon entry. Shannon wasn’t just difficult – she was also fearless. She wasn’t afraid of anything, which is a mother’s worst nightmare. I blame her for all my gray hair. Thank goodness for Miss Clairol!

Shannon is the middle child, with everything that entails. She was only a year old when her younger sister arrived, and since Melissa was born with a cleft palate, she took up a lot of my time. Shannon didn’t get the attention she deserved, although I did the best parenting I could.

Shannon was extremely hard-headed as a child. We used to say that her head was the hardest substance known to man. You couldn’t tell her anything! Once, when she was about four, we went fishing one day. There was an electric fence by the pond to keep the cows in, and we warned her not to touch the fence. We told her it would “bite” her. As soon as we got her out of the truck, I saw the wire jumping up and down, out of the corner of my eye. Shannon was standing next to it.

“Did you touch the wire after we told you not to?” I asked.

“Uh-huh. And it didn’t bite me!”

How was I to know the fence was turned off? I cite this as the reason she never fully believed us when we warned her about something.

When she was about five, she found the scissors and decided to play barber with her sister’s hair. She cut it to the scalp. At the time, we lived in a tiny speck on the map called K-ville. We started calling Shannon the Barber of K-ville, pronouncing it so that it would rhyme with the Barber of Seville.

She went through a stage when she was very into Barbie. She had numerous Barbie and Ken dolls, but they were all headless. We found the heads one day in a box under her bed. Whenever Johnny took a shower in the girls’ bathroom, he’d find a big pile of naked and headless Barbies and Kens in the bottom of the tub. He’d usually trip over this “Barbie orgy.”

Also, after taking a bath, Shannon would usually run naked through the house and perform a little jig for us. We referred to it as the “naked girl dance.” Thank goodness she quickly outgrew this phase!

When Shannon was a little older, she began to collect animals. She had a huge heart and love for all creatures and would try to befriend a snake as quickly as she would a kitten. One day she came home from school leading a scruffy dog by a rope.

“Mama, can I keep this dog? It followed me home.”

“The dog followed you home?” I asked.

“Uh-huh. It just kept following me.”

“Then why is there a rope around the dog’s neck?”

“That helped it follow me,” she explained solemnly.

Another critter incidence: One day I was sitting on the toilet, and Shannon came in with her hands behind her back.

“Mama, are there any poisonous snakes that are green?” she asked.

“No, at least not around here,” I explained.

“Good!!” With that, she swung her hand around and dangled a long green writhing serpent in my face. I was not amused.

Shannon has always been a real “people person.” When we’d go on vacation, she immediately befriended everyone she met, and they all knew her by name. Johnny and I became nameless entities, simply referred to as “Shannon’s mom” and “Shannon’s dad.” Oh, and speaking of vacation, before she learned to swim, she got away from her father once and ran to the pool at the condos. She jumped right in the deep end and sank straight to the bottom. If there hadn’t been a man nearby to dive down and retrieve her, she would have drowned.

When Shan got to be a pre-teen, she turned into a beautiful girl, and she knew it. She had enough self-confidence for ten people. A lot of girls hated her, so she had a hard time at school. She did make some good friends, however, largely through horses. She had always loved horses and had them when she was younger, but after her father and I divorced, the kids and I moved back to my hometown and we had a house in the suburbs. We couldn’t very well keep a horse in the back yard. Sometimes another girl at school would mention that she had a horse, but no one could ride it because it was too wild. Shannon would perk up and say that she could ride it. So the girl would invite Shannon over to work with the horse in question, and sure enough, Shannon would ride the sucker! She’s always had a way with animals, and as I’ve already mentioned, she was absolutely fearless.

When Shannon was twelve, her younger sister, Melissa, was very into gymnastics, and her older sister, Mandy, was busy with show choir and several high school clubs. I felt that Shannon needed something that was hers, so I saved up and bought her a horse for Christmas. Melissa decided she wanted to give up gymnastics for horseback riding, so we bought her a Welsh pony. We boarded the horses at a stable outside of town, and the girls rode the bus there every afternoon after school. They both became excellent riders.

By this time, I had remarried. The next year, we bought a place in the country, in the middle of nowhere. The girls had their horses right in their own back yard. We were surrounded by dirt roads and pastures, so they had plenty of places to ride. Sometimes Shan would pack a lunch and be gone all day on her paint mare.

When we first moved to our country house, we wondered where the septic tank was. We let Shan drive the jeep around the farm, and she found the tank for us. She backed over it and sank the jeep into it. She was very helpful.

As difficult as child rearing is with young children, parenting teenagers is a whole different ballgame. And I often think it’s even harder with girls. When Shannon was about fifteen, she began sneaking out at night to meet boys. Once she “blossomed,” boys from all over found her. They’d show up to see her, and Johnny would put them to work. They didn’t even mind working for free as long as they could look at Shan.

Shannon hated high school. She was smart, but her attention span was short. It got to the point where I had to physically force her to go, and I was a teacher at her high school! I’d make her get up and get dressed and put her in the car. The girls rode with me to school. Shannon would still manage to skip, however. When I went to my classroom, she’d sneak back outside, where a friend or boyfriend would pick her up. I was ready to pull my hair out, so I met with one of the guidance counselors for advice.

Counselor: Is there anything she’s interested in, besides boys, horses, and partying?

Me: Well, she says she wants to be a nurse one day.

Counselor: Let her take the GED and enroll in nursing school.

I didn’t like the idea of having a high school dropout! But I didn’t really see that I had much of a choice. She quit school and got a job. She soon met a guy named Joe, and they quickly became serious. At the age of eighteen, she married Joe and moved a hundred miles away. I was heartbroken.

She surprised me by taking the GED, and she passed with flying colors. She enrolled in a college near her new home, but things weren’t working out. Joe was very controlling. He didn’t want Shannon to go to school, or to go anywhere else, for that matter. He wanted her to stay home, cooking and cleaning. He forced her to drop out of nursing school, and he became abusive. She divorced him and moved back home.

Now she became really wild. She got a good job as a waitress in a bar, and she made excellent tips. She and a girlfriend rented a nice house in town, and they had parties all the time. I think some of the attendees might have brought drugs to some of the parties, and I know alcohol was involved. Sometimes they’d take off for the weekends to Jacksonville to check out the clubs there. A couple of times, I had to go get Shan out of jail for minor offenses. The funny thing was, she always made friends with her jailers. In fact, several wanted to date her after her release.

One summer I was fishing on the pier at Amelia Island, north of Jax, when I heard someone yelling, “Mama! Mom! Hey, Mama!” I didn’t pay much attention to it – there were tons of kids at the beach, along with numerous mothers. I did pay attention, however, when the cries changed to “Hey, Holle Abee!” That was me.

I looked in the direction of the call, and there was Shannon, standing shoulder-deep in the ocean. I was shocked to see her there, but I was even more shocked to see what surrounded her. Because I was up on the pier, I had a unique vantage point that she wasn’t privy to. She was surrounded by a huge school of stingrays! I told her to stand still and wait for the rays to pass. Of course, she paid no attention to my warnings. Luckily, she escaped without harm. I’ve decided that Shannon had a guardian angel.

At the age of 21, Shannon became re-acquainted with a childhood friend, Jade. They fell in love and got married. Jade’s a good guy, and he supported Shannon in her desire to finish nursing school. And finish she did, graduating at the top of her class! She immediately landed a job as a nurse.

Shannon is 28 now. She and Jade have two beautiful little girls, and last summer, they had a baby boy to complete their family. They live in a nice house, just up the street from me. Shannon works as a nurse in a pain management center, and her patients love her. I’m always running into them, and my heart fills with pride when they tell me what a wonderful, compassionate caregiver she is.

Shannon is also a great mother and a Christian. She loves spending time with her kids, whether at home, at church activities, at the park, or on overnight trips. Shan is also actively involved with both of the girls’ schools, often volunteering to read to the class and to take treats to the school. She also values extended family and loves getting together with her sisters and their families, her in-laws, and with Johnny and me. I’m so amazed that she has evolved into such a wonderful, responsible adult. You won’t believe the number of prayers I’ve uttered concerning her!

If you can relate to what child rearing is like with a very difficult child, take heart. You’re certainly not alone! Child rearing is never easy, even with “normal” kids. Instructions on how to raise a child are not included with the little bundles of joy. Sometimes good parenting comes from trial-and error, and sometimes it comes from parenting tips from magazines, books, friends, family members, and professionals like guidance counselors. I think the parenting tips I got from school guidance counselors was excellent advice, even though I wasn’t so sure about it at the time.

I’m extremely grateful that my child rearing saga had a happy ending. Shan is a happy, productive, well adjusted adult now. I love hanging out with Shannon – she’s so much fun! She can even make a trip to the emergency room funny, as she actually did once. But that’s a story for another day.

How to Buy and Store Cheese

Cheese is an excellent ingredient lending a rich experience any a delicious dish.   We cheese lovers also enjoy cheese in its raw natural form.  The many varieties and flavors lend adventure and satisfaction to many a happy taste bud.  A good knowledge of buying and storing quality cheese is an important practice to provide the best of cheese, the amazing ingredient!

When buying cheese aim to buy a good fresh quality cheese. Before you buy cheese sample it looking for a smooth, non buttery flavor. If tasting is not an option, let your eyes test the cheese for you. Survey the wrapper; avoid a sticky and wet wrapper that’s reduced from the size of the rind.

Unripe Soft Cheese – When buying unripe soft cheese such as cream cheese, or Neufchatel, ricotta or cottage cheese look for the date on the package and pick the freshest of the lot.

Semi Firm Cheese – Semi Firm cheese as in; Mozzarella, Swiss, or Monterrey Jack should look moist, not cracked or dry.

Blue or Green Veined Cheese – When buying cheese with a blue or green vein as in; blue or Roquefort, avoid any cheese with browning near the veins.

After buying fresh cut cheese, always re-wrap it. Re-wrap the cheese tightly in plastic wrap to prevent it from drying out. Keeping air out and away from cheese will prolong the storage life.

Strong smelling cheese should be stored in a plastic container with a tight lid to prevent the aroma of the cheese from affecting other foods.  When it comes to chilling cheese, be careful to store cheese in the coldest section of the refrigerator. Fresh, unripe cheese should be used soon after it’s purchased, but both processed and natural cheese will remain fresh for several months if wrapped well and refrigerated.

Cheese will mold as it’s stored; slice off the mold, in addition to a generous portion of the underlying cheese to reveal the remaining cheese which should be safe for eating.

Freezing Cheese? Yes You Can!

Although frozen cheese may not be desirable as an appetizer, it can be used for casseroles and as a topping. Harder varieties of cheese may be frozen, but will end up drier and crumblier than before.

Freeze Cheese – Unopened hard and semi hard cheese can be frozen for up to two months. If the original package has been opened, re-wrap the cheese tightly and freeze for up to six weeks. Cut cheese into 1 inch thick pieces, wrap tightly in a plastic wrap to keep moisture in and air out.

Thaw Cheese – To thaw cheese, remove it from the freezer, and refrigerate for 24 hours. Plan to use frozen cheese soon after it thaws.

Note – Soft and soft cured cheese do not freeze well as they become crumbly and break down in texture far too much for the effort.
